corn beef glaze

by tommy
(daytona / ireland)

this glaze works well on many things but with corn beef it tis good, me mum gave it to me from her mum and so on, and was used on lesser cuts of beef ,if they could afford them , corned beef is not truely irish but in the states it has become an irish icon !
we use american stuff now but the taste is still good ,
rinse beef well in cold water , cut off any skin left , simmer til it flakes off with a fork ,3-4 hours , remove beef add your potatoes and boil them ,
glaze
1/3 cup brown sugar
2 tbl soft butter , the irish stuff
5 tbl ketchup
1tbl mustard , any kind will do ,
few cloves
bast beef with glaze and bake for 35-45 min.
glaze again bout half way , i at times let the glaze get a wee bit , dark , me kids like it that way , all in taste
cabbage lads just put in a big frying pan and add water and lots o butter , simmer till soft then throw in with the potatoes and dish it all out , simple yet not mushy , tastes like it should , we went through 7 beefs this year ,
good luck

That sounds good
by: Michael

I want to give this recipe a try. It sounds good. But I think I'll wait just a bit. We've had 4 corned beef meals in the last month alone, all cooked different ways. I don't want to over do it. But I'll have to try just one more.
